Most popular street Food in Urban India: Chinese food

What do Chinese food restaurants in India or anywhere really serve? Is it the food that we can get to eat in a common Chinese home in mainland China or even on the streets of Shanghai or Beijing or in the swanky local restaurants across the length and breadth of China?

No, not at all! The Chinese food in India, anywhere has no resemblance whatsoever to the real Chinese food of that country. Even after considering that China is a humungous country with all kinds of weather and other geographical features and it is natural to expect that the food will differ with the region which is also true of India, what we get as Chinese food in India has no connection with the food eaten in any region or place there.

Because what we get here is the Indianised and regionalized version of what we think is Chinese food. The borders of India and China touch at a few places in the North and North-eastern parts of the country and there could be a semblance of common taste in those regions but that is restricted and not completely true at all. That is to say that although we may consider that the food of the natives of Manipur or Arunachal Pradesh or Assam to be the same as what we think is Chinese food in India, it is not so at all. All our states have their own special cuisine that has been developed over decades by virtue of what is grown there, what the climate is like and the local customs.

There are hardly any Chinese food restaurants that can be called real and a very few that have been part of the International Hotel chains that bring some authenticity to the Chinese food in India. But I have no hard feelings since whatever small Chinese food restaurants or the street hawker of Chinese food in India bring to us give us great enjoyment , fulfillment and nourishment at a fairly cheap price. What more do we wish to have?
